scalpel-like sharpness

Thin blades, flexible and ever so sharp! Out-of-the-box these knives simply "drop" through fruit and meat with minimal effort. They look great and feel ever better. The chef's knife (Gyuto) is not especially tall at the handle end, but this doesn't matter as you can get close to the food and get the job done. Highly recommended
