It strikes an excellent balance between durability, edge retention, and ease of sharpening. Slightly more ductile than Blue #1, it's widely used in crafting traditional Japanese knives, beloved by chefs for its resilience and sharpness, albeit is slightly softer than Blue 1.

Great product, great service

Very happy with my purchase. First time customer, ordered and received a knife that had a chip which occurred during shipment. The staff at Chefs Edge were very prompt in communication and really helpful in resolving the matter. They sent out a new knife and arrived in time for a birthday. The knife itself is great quality and looks better than the photos. Overall, very happy and will be a return customer!
