Same hand-filleted trout from northern Portugal, this time in a curry sauce that leans more creamy than fiery. There's curry powder and a little chilli in there, with mustard and lemon juice keeping it lively, but the heat stays mild enough that you can still taste the fish.

This is the tin I'd hand to someone who reckons tinned fish isn't for them. Warm it gently and spoon it over basmati with fresh coriander, or wrap it in a warm roti with a squeeze of lime. It's dinner in about the time it takes to cook the rice.
