Blade Type
Blade Type

The Gyuto knife, a cornerstone of Japanese culinary tradition, is a versatile, all-purpose chef's knife. Its name, translating to "beef sword," reflects its proficiency in slicing meat and in more modern times vegetables. However, its slightly curved blade excels in chopping, dicing, and mincing, making it indispensable in any kitchen.

Steel Type
Steel Type Read

Japanese SLD steel is a semi-stainless steel crafted through advanced metallurgy. It is used often in Sanjo knives, has a non-chippy edge and is extremely tough. This high-carbon steel, enriched with chromium and molybdenum, offers excellent performance, but be mindful not to leave it wet for extended periods.

Do not buy this knife

I received this knife in early July. It looks stunning, but unfortunately performs very poorly for the price.

Out of the box, the factory edge was poorly finished and quite dull, requiring work on a whetstone. I researched SLD steel further and followed the recommended approach of thinning the edge, using a lower-grit stone, and finishing with a toothier edge. I managed to get it sharp, but it has never matched the sharpness of my other knives.

The blade chips very easily, has poor edge retention, and often feels dull after just a couple of prep sessions. It also steers noticeably when cutting.

Aside from its appearance, I can't recommend this knife. There are £30 knives, such as the Victorinox Fibrox chef's knife, that outperform it in almost every way apart from looks.

To be clear, there was nothing wrong with Chef's Edge's service and I can't fault them. My issue is entirely with the knife itself. For the price, I regret buying it and would strongly recommend spending your money elsewhere.
