Crafted in Sanjo, Niigata with the typical attention to detail expected of goods from this area, they are a lightweight, no-fuss option for yakitori, steaks, vegetables, seafood, or anything else that does well cooked on charcoal.
Just heat our White Charcoal Sticks, empty them into the centre compartment, and you're good to go. (Please note some charcoal may need breaking down before being placed into the central compartment.)

So says Hidetaka Shimizu (traditional craftsman).
The first skill he learned was hand polishing. This involves using both the hands and the eyes to carefully polish the cut surfaces, and it is a task that takes time. This young man, who was charmed by Edo Kiriko in his youth, learned each of the techniques involved one by one, and after studying for around a dozen years, he finally became independent and set up his own workshop and store.
"It has been scientifically proven in experiments that the sense of taste is affected by what can be seen, heard and felt. Beautiful designs and colors that delight the eyes and the feel of fine items in the hands and on the lips are all elements that go to create the sense of taste.
It is because of this that I believe that everyone should introduce fine articles into their everyday lifestyles to turn every day into a pleasant experience.

Knife Information
1894- Mr. Tasaburo Shigematsu, a hardware wholesaler, introduced a new pocket knife with its blade and sheath folded by installing a small handle “Chikiri (tail)” on the blade, while inspired by the knife he brought back from Kagoshima.
He named it “Higonokami Knife” because many of his customers were in Kumamoto area (formally Higo country), which turned out to dramatically increase his sales. The blades have gradually changed their shapes. Unlike single-edged knives, the double-edged blades (V-shaped cross section) were in those days considered common. The earlier blades had a sharper tip (shape of a bamboo leaf), but now they have square shapes. The sheaths had a vertically folding style and a cross folding style, now the vertical one has to be custom made.
In 1911, at the First Kobe Export Articles Competitive Exhibition, Crown Prince (later Emperor Taisho) liked Higonokami on display very much and bought one, which is said to have helped its fame further spread.
The Higonikami is a fantastic traditional utility knife at a low cost.
