Blade Type

The Petty is your smaller knife for delicate work. Think mincing garlic, trimming up chicken thighs or meats, skinning fruit, and just about anything else the Bunka or Gyuto is too large for. It's an essential part of your knife range and we use ours almost daily.

Steel Type

ZDP-189 steel, a premium high-carbon stainless steel developed by Hitachi, is celebrated for its exceptional hardness and unmatched edge retention. With an extremely high carbon content and added chromium, it offers outstanding sharpness and corrosion resistance. Its remarkable wear resistance and ability to hold a razor edge make ZDP-189 one of the finest choices for high-performance Japanese knives.

Care Information

This knife is made with stainless steel and is easy going and low on maintenance. It has high chromium content, meaning it is generally considered safe to leave wet on the board for short periods of time. is still best practice to not leave this knife to air dry as it's stain-less not stain-none! Wipe down after washing the knife and store away from any sources of moisture.

Kisuke

Embracing a rapid rise in popularity for his unique designs and committment to striving for perfection, Shunsuke Manaka is the man behind Kisuke knives. From the sketchbook to the kitchen, he is the sole craftsman behind the entire knifemaking process. A tragedy struck in July 2024, by which his entire workshop and most of his attached family home burnt down in a fire. We started a fundraiser for him that raised enough funds in conjunction with other donations that allowed him to set up shop in Sanjo, Niigata, amongst other renowned knifemakers in the area, and he is now producing knives again in 2026.
